Oven / Grill Roasted Artichokes

Inspired by the Hitchingpost 2 Grilled Artichoke recipe, this one can be made in the oven or on the grill.

  1. 1-4 artichokes
  1. onion powder based spice mix (spike original works okay, but I prefer to make my own or purchase some _magic dust_ from the Hitchingpost 2)
  1. bay leaf
  1. large clove of garlic
  1. high heat oil (sunflower oil works well, as does any infused rapeseed oil)
  1. salt (optional)

Preheat oven or grill to 500F. Add bay leaf and garlic to a large pot of boiling water. Par boil the artichokes in the water for 10-15 minutes, remove and blanche. Once completely cool, splice artichokes in twain and pat dry with a paper towel. Carefully remove choke with a spoon (I find that holding the artichoke half with a pair of tongs helps a lot with this task). Lightly oil entire artichoke and dust generously with spice mix. Roast split-side down until top leaves are tender.
